  1. Low acid white wines are actually fairly rare.  Many of the best whites are noted for their acid balance.  Those lacking acid are sometimes called "flabby".  A few varietals that tend to have a bit less than others:

    Semillon.  This is hard to find as a single varietal, but some wineries make on.  

    Viognier

    Pinot Blanc

    Another way to find low acid wines is look for those grown in very warm climates.  I don't know the chemical process, but hot weather tends to minimize the development of acid while creating more sugar.  Look for whites from California regions like "Lodi" or "Central Valley".
