Can you use SAT II prep books and AP prep books interchangeably to study for both types of exams?

No, these are two very different tests.

SAT prep books contain less information than AP prep books so no you cannot use SAT prep books to prepare for AP exams. You can use AP prep books to prepare for SAT exams though. In general it's better to buy a different book for the SAT subject tests than the one you use for AP exams because SAT prep books will have specific tips to help you pass the SAT subject tests and AP prep books have specific tips to help you pass the AP exams.
