Can your opponent use snatch steal on one on my monsters and control it if my opponent already has five monsters on their side of the field????

no. if a person already controls 5 monsters, then they cannot take control of their opponent's monster

No, the opponent cannot activate Snatch Steal.

First of all, Snatch Steal is banned unless you are playing by Traditional rules.  Second, if your opponent has 5 monsters they cannot activate any card that would allow them to take control of one of your monsters or that would allow them to special summon a monster.

Your opponent cannot and if you plan on going to a tournament Snatch Steal is banned and cannot be used against you in tournament play.
