I opted not to get the all-inclusive. Any suggestions on inexpensive places to eat and things to see?

  1. Grocery shop at Sam's club or Walmart and cook in.  We go for 2 wks every year and cook in a lot.  It saves a lot of money and time.  We also bring a bag full of canned foods, cereals and pastas......you can go cheap if you plan ahead!  Have fun.  Also, buy a case of water and freeze to bring on walks, shopping, beach or pool.

  2. The inexpensive places to eat, besides McDonald's, are in the actual city of Cancun where the locals eat. You can take the bus into the city for around 70 cents. Also, to save money on places to see, just do it yourself. There is a small set of ruins toward the bottom of the hotel zone, so you could take the bus there too. Or if you want to see the ruins in Chichen Itza or go to Xcaret or Xel-Ha, you could rent a car, but be careful. The police sometimes stop you for no reason and ask for a bribe. That happened to me when I was riding with a friend of mine from another part of Mexico. Otherwise, you could visit Isla Mujeres, where you can rent golf carts or scooters for the day to sightsee on this island and swim and snorkel. Have fun!
