Canning banana peppers recipes?

I have gotten so many banana peppers from my garden and im still getting them. Ive given so many away! But im wanting to can them! I want a taste like the jars you buy in the store. Ive never canned anything so i need some details with the recipe please.

  1. 48 hot banana peppers

    1/4 cup white canning salt

    1 quart white vinegar

    3 quarts water

    24 quart jars sterilized in boiling water take one jar at a time an place as many peppers as you can in use a butter knife an push back an this way you can get moore peppers in after all jars are filled .Mix the vinegar salt an water together until disolved in a sauce pan bring to a boil but do not boil an pour over jars take butter knife in jars an press pack to get all the air bubbles out wipe the rims of the jars an put lids an rings on tight place in water bather 5 minutes no moore or they will be soggy after 5 minutes take on set jars on a cloth an wait for them to SNAP the ones that do not snap after the jars are cool put in fridge as you CAN not but in water bather the second time.


  2. Pickled Peppers:

    4 quarts peppers

    1 1/2 Cups canning salt

    4 1/2 quarts water, divided

    1/4 c sugar

    2 tablespoons prepared horseradish

    2 cloves garlic

    2 1/2 quarts vinegar

    Cut two small slits in each pepper.  Dissolve salt in 4 quarts water .  Pour over peppers and let stand 12 to 18 hours in a cool place.  Drain rinse thoroughly. Combine 2 cups water and remaining ingredients in a large saucepot.  Simmer 15 minutes.  Discard garlic.  Bring liquid to a boil.  Pack peppers into hot jars, leaving 1/4 inch headspace.  Ladle hot liquid over peppers, leaving 1/4 inch headspace.  Remove air bubbles.  Adjust two piece caps. Process half pints and pints 10 minutes in boiling water.

    I have a lot of banana peppers, and serranos too.  I haven't had time to can them so I just wash and dry them and put them in a freezer bag and freeze them.  Just take out what to need, and thaw to use.
