Canning greenbeans?

i dont have a pressure canner, can i still can greenbeans?

I have been canning for years and only do green beans in a pressure cooker because they are a low acid food unlike tomatoes which can be canned in a water bath canner.  Please obtain a canning book from the library or bookstore.  Ball does have an excellent one.  Canning is a great way to store fresh food and it saves money but it needs to be done correctly because of the risk of spoilage of the food.  Be safe, learn the correct way and be extremely clean and careful.  For myself, if I did not have a pressure canner I would freeze the beans.  I know that my Mother-in-Law used a water bath canner to can green beans and if you go that route, keep the jars in the refrigerator to be on the safe side.

  2. You can use mason or Kerr jars put one teaspoon of salt (Un-iodized) in quart jar with green beans.  Place in water and bring to hard boil  Let boil for twenty minutes While cooling lids will seal (You will hear pop and center of lid will be indented) Ball has an excellent book on canning

  3. You can use the water bath method. Any good cookbook with a canning section will tell you how. For best results use distilled water (IN the jars.) Tap water and well water have chemicals and minerals that will give your beaners a funky color or taste down the road..And stick to regular salt - not iodized for the same reasons. Good luck.

  4. To safely can greenbeans you must use a pressure cooker. Green beans are a low-acidic food and they must be sterilized properly. If not they are extreme harbingers of food-poisoning such as botulism.
