Caribbean beef patties?

I need the recipe for Caribbean beef patties, especially the filling. It is so mouthwatering. I had one this afternoon (...again) and now I would really love to make some at home. Thanks!

  1. I make them with medium ground beef, fine chopped onions, garlic and saute it together with a bit of curry powder, a chili (I like a Jamaican Scotch Bonnet, but a jalapeno is fine, seeds or not), a bit of salt and pepper, and a few breadcrumbs.

    I make the dough and chill it then when the filling is cool I portion out the pieces and use my tortilla press to make the rounds, fill them and then bake them off at 375 d F for 20-25 minutes


  2. INGREDIENTS

    2 cups all-purpose flour

    1 1/2 teaspoons  medium strength curry powder

    1 dash salt

    1/4 cup margarine

    1/4 cup shortening

    1/3 cup water

      

    2 tablespoons margarine

    1 pound ground beef

    1 small onion, finely diced

    1 teaspoon curry powder

    1 teaspoon dried thyme

    1 teaspoon salt

    1 teaspoon pepper

    1/2 cup beef broth

    1/2 cup dry bread crumbs

    1 egg, beaten



    DIRECTIONS

    Preheat oven to 400 degrees F (200 degrees C). In a large bowl, combine flour, 1 1/2 teaspoons curry powder, and pinch of salt. Cut in 1/4 cup margarine and shortening until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Shape dough into a log, and cut into 10 equal sections. Roll each section into a six inch circle (approximately 1/8 inch thick). Set aside.

    Melt margarine in a skillet over medium heat. Saute onion until soft and translucent. Stir in ground beef. Season with 1 teaspoon curry powder, thyme, 1 teaspoon salt, and pepper. Cook until beef is evenly brown, stirring constantly. Stir in beef broth and bread crumbs. Simmer until liquid is absorbed. Remove from heat.

    Spoon equal amounts of filling into each pastry circle. Fold over and press edges together, making a half circle. Use a fork to press edges, and brush the top of each patty with beaten egg.

    Bake in preheated oven for 30 minutes, or until golden brown.

  3. JAMAICAN BEEF PATTIES  

    2 lbs. ground beef

    2 bunches fresh thyme

    1 tsp. paprika

    1/2 loaf French style bread

    1/2 tsp. Accent

    2 oz. escallion (1 stalk)

    2 sm. hot peppers or dried Tabasco pepper to taste

    1 tsp. salt

    Grind escallion and hot peppers in a mincing mill. Add to ground beef with salt. Place meat in a saucepan making a well in the center into which you place the thyme. Cook without adding any water or fat until the meat has lots its broth and only a certain amount of oil remains. Pour off excess oil.

    While meat is being cooked, pour sufficient cold water over bread in a saucepan to cover and soak for a few minutes, then squeeze dry, saving the water. Pass the bread through a mincing mill and return the ground bread to the water with thyme and cook until bread is dry. Combine meat and cooked bread. Add paprika in sufficient quantity to color meat and cook together for a further 20 minutes. Add Accent. Remove from heat. Cool. Fill pastry, circle fold over, crimp edges and bake.

    Use any non-flaky pastry recipe and roll out into circles.

    JAMAICAN BEEF PATTIES  

    3 lbs. ground beef

    2 grated onions

    1 stick celery

    1/2 green pepper

    Pinch of salt

    Pinch of black pepper

    1 tsp. thyme

    1 hot pepper

    PASTRY:

    4 1/2 c. flour

    1/2 c. butter

    1/2 c. shortening

    1/2-1/4 c. water

    1 pinch salt

    TOPPING:

    2 eggs

    Brown ground beef, add rest of ingredients.

    Place salt, flour, butter and shortening in bowl. Blend ingredients finely. Add water to dough. Use a rolling pin to flatten the dough. Cut out dough with glass cup. Place small amount of ground beef on one side of dough. Cover with other side and seal. Beat two eggs brush on patties. Bake at 350 degrees.

  4. You can find the dough allready made for you to use at any latin supermarket sometimes at wall mart...

    You can try anything like chicken, ground beef, etc...

    Adobo seasoning is good (Goya Brand is the best) just a bit it has salt allready in it.

    Sazon Accent (another seasoning )

    one packet is fine it will give a bit of color

    chopped onions, garlic, to taste

    and there is also sofrito (walmart also sells in the frozen spanish section)

    like 3 table spoons of vegetable oil into a pan, put like 3 table spoons of sofrito in medium high put the onions, garlic, and then the meat, stir ocasionally

    put fire down to medium when you put the meat in until its cooked....

    now that you are ready if you still have grease is always good to drain the meat

    you can add cheese if you like is to your own taste!

    Now that you have the dough, put a certain amount of the meat and the easiest way to fold the dough is to fold it half way together and with a fork press down all the ends until cover from one end to the other and let fry in medium heat until golden!

  5. Jamaican Meat Patties  

    1 package Goya Discos (frozen turnover dough) Yellow or White --these are in the frozen food case at the grocery.  makes for easy, good quality dough

    For the filling:

    2 tablespoons vegetable oil or butter

    1 large onion, finely chopped (1 1/2 cups chopped)

    6 cloves garlic, minced

    1 tablespoon finely chopped fresh ginger

    1 pound ground beef

    1/4 teaspoon ground turmeric or annatto

    3/4 teaspoon ground cumin

    3/4 teaspoon ground allspice

    1/2 teaspoon ground cardamom

    1 scotch bonnet pepper, seeded and finely chopped, optional

    2 sprigs fresh thyme, finely chopped

    3 scallions, finely chopped

    1 tablespoon finely chopped parsley

    1 pound ripe tomatoes, peeled and finely chopped

    1 1/2 teaspoons salt

    Freshly ground black pepper

    3/4 cup water or beef stock

    3 tablespoons Jamaican rum

    To assemble the patties:

    Flour for rolling out the dough

    2 egg yolks, beaten with 1 teaspoon of rum

    In a large skillet, heat the oil until hot but not smoking. Add the onion and cook until softened, about 4 minutes. Add the garlic and ginger and cook for 1 minute. Add the ground beef, turmeric, cumin, allspice, cardamom, hot peppers, and thyme and cook until the beef is browned and spices are fragrant, about 10 minutes. Add the scallions, parsley, tomatoes, and stock and simmer for about 25 minutes, until the flavors have come together and almost all of the liquid has evaporated. Season, to taste, with salt and pepper, remove from the heat and stir in the rum. Set aside to cool before assembling the patties.

    Preheat the oven to 400 degrees F.

    Spoon a scant 1/4 cup of the cooled filling onto the center of one side of each circle, and lightly brush the edges of the circle with a little of the beaten egg yolk mixture. Fold the other half of the pastry over so that the edges meet, and use a fork to crimp the edges together. Lightly brush the top of each patty with a little of the beaten egg yolk mixture. Place the patties on parchment-lined baking sheets and bake until golden brown, about 30 minutes. Serve immediately.
