  1. I'm from Brazil and I have friends from Mexico. We say that Carne azada is from any part of the beef. The literal translation is Roasted Meat. Its basically is any meat that is roasted.

    Carne= Meat

    Azada= Roasted

  2. My husband is born and raised in Mexico and I just let him read your question and he said it comes from the legs of the cow.

  3. My husband thinks that it is from the back.  When I make it I just buy thinly sliced rib-eye.  It is oh so good.
