Carpenter's Seat's ?

What is that seat carpenters sit on that has like a saddle. There is a bar at the bottom that you push to hold wood.

I think you mean a shavingmule. for holding wood with your feet while you plane or scrape the finish,\.

Are you thinking of a carpenter's vise, like that on the PBS show "The Woodwright's Shop" with Roy Underhill?  There's one in the picture at bottom center, at the link below.
