Carribean islands questions about food??

Hey Im doing a big food project on the Caribbean islands. I need to know some of there staple foods. I also need to know crops that are cultivated, as well as dishes that are commonly eatin(breakfast, lunch n dinner) thanks!

  1. The DR uses lots of root veggies and what they call viveres as the base-Yucca, Plantains, green bananas, sweet potato, pumkin, potato.  Lots of white rice and different types of beans

    Breakfast-Mashed plantains with Fried cheese and Fried onions on top

    Lunch-Biggest meal, always rice, beans, and slow cooked chicken on the bone in tomatoey sauce

    Dinner-Something small like hot chocolate made with whole milk and bread, or some veggie soup with noodles and meat


  2. There are so many islands, but common foods and crops for that matter are coconut, plantains (a banana like vegetable), yucca, casava, and bread fruit.

  3. CARRIBEAN SHRIMP

    INGREDIENTS

        * 1 tablespoon vegetable oil

        * 2 tablespoons minced fresh ginger root

        * 2 limes, juiced

        * 2 cloves garlic, minced

        * 1 tablespoon soy sauce

        * 1/2 teaspoon white sugar

        * 1/2 teaspoon crushed red pepper flakes

        * 2 pounds large cooked shrimp, peeled, tails on

        * 1/2 cup chopped fresh cilantro

    DIRECTIONS

       1. In a large bowl combine oil, ginger, lime juice, garlic, soy sauce, sugar and red pepper; mix well. Stir in shrimp and cilantro. Cover and refrigerate 1 to 4 hours before serving. Stir occasionally while chilling.

    Caribbean Style Chicken With Peanut Brown Sugar Spice Rub

    Ingredients

        * Spice Rub

        * ½ Cup finely ground roasted peanuts

        * 1/4 Cup packed light brown sugar

        * 1 Tablespoon Kosher salt

        * 2 1/4 Teaspoon ground bay leaf crumbled

        * ½ teaspoon plus a pinch ground cloves

        * ½ teaspoon plus a pinch ground nutmeg

        * 1 teaspoon ground cinnamon

        * 1 teaspoon dried chilies

        * salt + pepper to taste

    Directions

       1. 1. To make the spice rub, combine the peanuts brown sugar, salt, cayenne, ground bay leaf, cloves, nutmeg, cinnamon and chillies in a bowl. With a small sharp knife score each thigh twice on each side ½ inch deep place the chicken in a large bowl add the spice rub and toss to coat evenly

       2. 2.prepare the barbecue to 250 F place the chicken on the grill heat for 40 to 50 mins or until juices run clear and skin is crispy

    breakfast= crema de maiz and coffe with milk

    lunch= domplains with beans or bacalao(fish)

    dinner= heaviest food of the day it usually is rice with beans and pork or fry chicken

    Puertorican food is very good but we eat a lot of different stuff!
