Carrot cake refrigeration ?!?

when you make carrot cake , or any kind of cake with cream cheese icing, do you need to put it in the fridge ? any great carrot cake / icing recipes ?

  1. The cream cheese icing is what makes you need to refrigerate it.  It can sit out for fairly long periods but ultimately you do need to refrigerate it.

Yes, do refrigerate.  Here is how I do carrot cake, and it's delicious!  I use a box of yellow cake mixer, about a pound of grated carrots, a heaping cup of yellow raisins, a heaping cup of chopped walnuts, a small can of crushed pineapple, strained, a heaping spoon full of ginger, cinnamon, nutmeg, and allspice, and the ingredients on the cake mix box.  I mix it all together and bake in 2 large round pans for as long as the box says to bake it.  Here's how I make the Icing:

    2 8oz boxes of cream cheese

    2 sticks of butter at room temp.  

    3pounds of powdered sugar

    1 tsp. vanilla

    milk

    I mix the cream cheese and butter in the mixer on high to smooth it out, then I add the powdered sugar and vanilla.  I mix on low until it's nice and creamy, adding enough milk to help it along.

    Now ice your cake and voila!

  4. because of the cream cheese yes it is better in the fridge however i have noticed it out on shelves in tescos, but i would definitely not leave it out for more than 6 hours, cover it if you do leave it out.

  5. If they are going to be around for more than 12 hours, yes they need to be refrigerated.

  6. Yes, the cream cheese frosting needs to be refrigerated (or it will sour)......This is the best carrot cake I've ever tasted.  It's light and moist, not heavy and dense

    14 Carat Cake

    2 c. flour

    2 tsp. baking powder

    1-1/2 tsp. soda

    1 tsp salt

    1 TB cinnamon

    2 c. sugar

    1-1/2 c. cooking oil

    4 eggs

    2 c. grated carrots

    1 8-oz. can crushed & drained pineapple

    1/2 c. chopped nuts (optional)

    FROSTING

    1/2 c. softened butter

    8 oz. softened cream cheese

    1 tsp. vanilla

    1 lb. sifted confectioner's sugar

    ....Sift together flour, baking powder, soda, salt & cinnamon.  Add sugar, oil and eggs and mix well.  Add carrots, drained pineapple and nuts.  Turn itno 3 9" layer pans or 9x13" pan, greased and floured.  Bake at 350 for 35-40 min, or until tests done.  Cool and frost.....

    *** Cream butter, cream cheese & vanilla.  Beat in powdered sugar.  If too thick, add milk until spreading consistency.....  Looks pretty if you put chopped nuts on the side of the cake:)
