Carrot seeds?

So my boyfriend and I were talking today about carrots (nothing inappropriate!) and their seeds. Where on earth do they come from? There are no seeds inside carrots! Wont they run out one day?

    My note: the seeds come from the flowers, not the root.

I've let carrots go to seed in our garden, collected the seeds and sown them successfully.  The carrots you eat are the root of the plant.  You eat them before the plant yields seeds, otherwise the carrots are woody and orrible.  If you want some of your own carrot seeds for planting next year, you leave some of the plants unpicked.  By about May or June in NZ, the tops will have some seeds.  Shake the tops into a container, keep the seeds that fall out and plant them next spring.  Best of all, stratify the seeds.  That is, put them into the freezer for a few weeks to tell them that they've been through winter.  It increases the germination rate.

    I'm often asked about where carrot seeds come from, so I thought I would finally write a little section about that. The reason the majority of people don't know how or where the carrot seed originates from, is because most carrot crops are harvested before the plant reaches full natural maturity. While most of us pull up the plant and eat the root during the first year of development, carrot seeds are not produced until the second year of the plants development. Carrot plants are biennial. As the seeds are so readily available from most home gardening stores, there really is no benefit to hanging around for two years to develop the carrot seeds yourself, which also do require special care during that time to make sure they survive.
