Casserole dish recipe with "no carbohydrate" ingredients?

I am looking for ways to lower my carbohydrate in take. I'm hoping you can share yours with me. If not, maybe you have a good option that works just as well or better.

  1. It is very difficult to make a casserole with no carbohydrates, but I have a recipe that is very low in carbs.

    Savory crabmeat casserole with onions and parmesan.

    Makes 5 servings  

    Amount Per Serving  

    Total Carbs 2.4g



    Ingredients  

    1 Oil, cooking spray, 0.33 second spray, serving

    1 tsp Margarine, 80% fat, unsalted

    1/4 cup fresh chopped onion, finely

    1 lb dungeoness crab meat, shells and cartilage discarded

    2 tbsp dijon mustard

    1 tsp worcestershire sauce

    4 egg whites, stiffly beaten (large)

    2 tbsp Cheese, parmesan, fresh, grated



    Directions

    1  Preheat oven to 350° F.

    2  Lightly spray a 9-inch square casserole dish or baking pan with vegetable oil spray.

    3  In a small saucepan, melt the margarine over medium-high heat. Cook the onion 2 to 3 minutes.

    4  Transfer the onion to a medium bowl. Stir in the crabmeat, mustard, and Worcestershire sauce. Slowly fold in the beaten egg whites. Pour the mixture into the casserole dish.

    5  Sprinkle the mixture with the cheese.

    6  Bake for 25 minutes, or until lightly browned. Remove from the oven and cut into rectangles. Serve immediately.


  2. Carbs aren't bad for you; they are essential. Your body loves brown bread, brown rice, whole grains. A casserole without carbs? Just try brown rice/whole grain pasta in place of white.

  3. its easiest to eat low carb by making simple meals not casseroles..  casseroles are usually an unhealthy nightmare of fatty meats, cheese, carbs, and sodium laden canned soups..

    make simple things with good flavor..  like grilled or sauteed fish or chicken with the seasonings recommended by the south beach guides..  herbs (oregano, basil, cilantro) and lemon and lime juice go a LONG way..  so do onions..  just give up on casseroles..  make them at the holidays and eat healthier the rest of the time..

Why not just make your meat and sides separate?  It tastes much better that way, anyways:) ....  Grilled salmon with a fresh green salad .... sliced fruit ...  Did you know that you can use cauliflower instead of potatoes for some recipes?  Mash some cooked cauliflower with margarine & a little coffee creamer (no carbs), salt & pepper to taste....cook some cauliflower al dente and use in whatever potato salad recipe you like (instead of potatoes) ....  Coat raw cauliflower in olive oil and sprinkle with seasoned salt, garlic powder and roast in the oven at 425 for about 20-25 min (or until browned).....  shelled edaname tastes even better than lima beans (and is better for you).....

    I think you're in the wrong section.  The only food with no carbs is meat.  Some cheeses and leafy greens are very low carb, but not zero carb.  The only zero carb vegetarian food I can think of is oil (olive, canola) ... which is pure fat.
