I need a recipe for a vegetarian meal thats cheap and easy to make without cheese, thanks.

  1. Pasta Salad

    (easy and simple but yet tastey)

    1 red bell pepper

    1 green bell pepper

    1 head of broccli

    1 head of cauliflower

    1 box of tri colored rotini noodles

    2 TBsp. regular mayo

    1/2 cup cooking oil

    Dash salt and pepper

    Boil the oil and noodles(with water of course) in a pot until the noodles are soft but not mushy. (the oil just keeps the noodles from sticking together)..In another pot boil the broccli and cauliflower until its edible but not mushy. In the meantime finely chop the bell peppers, add to a large bowl, add the mayo and season with black pepper and salt to your desired taste. Once the broccli/cauliflower and noodles are done, rinse them off in cold water to cool them off faster. Then add everything in the large bowl and stir. You might have to add more salt and pepper to taste. Either serve it up right away or put it in the fridge to get it cold.

    Variations are to add onion, celery and tuna (or cooked chicken)..

    Stuffed Peppers My Way

    "Roasted green bell peppers are stuffed with  a mixture of rice and green onions."

    PREP TIME  20 Min  

    COOK TIME  40 Min  

    READY IN  1 Hr  

    Original recipe yield: 2 servings

          

    INGREDIENTS

    1 cup water

    1/2 cup uncooked Arborio rice

    2 green bell peppers, halved and seeded

    1 tablespoon olive oil

    2 green onions, thinly sliced

    1 teaspoon dried basil

    1 teaspoon Italian seasoning

    1 teaspoon salt

    1 pinch ground black pepper

    1 tomato, diced

    DIRECTIONS

    Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.

    In a medium saucepan, bring water to a boil. Stir in the rice. Reduce heat, cover, and simmer for 20 minutes. Remove from heat, and set aside.

    Place the peppers cut-side down on the prepared baking sheet. Roast 25 to 30 minutes in the preheated oven, or until tender and skin starts to brown.

    While the peppers are roasting, heat oil in a medium skillet over medium-high heat. Cook the onions, basil, Italian seasoning, salt, and pepper in oil for 2 to 3 minutes. Stir in the tomato, and cook for 5 minutes. Spoon in the cooked rice, and stir until heated through. Remove from heat, mix in   the mixture into the pepper halves.

    Return to the oven for 5 minutes. Serve immediately.

  5. When I had surgery and could no longer have fat I used to make this ALL the time

    Pasta [penne, linguini, spaghetti, whatever you want]

    Pasta sauce, I prefer basil with italian seasonings

    Lots of veggies, olives, broccoli, peppers, etc

    I always chopped up a chicken breast but Im sure it would be great without it or with a vegetarian chicken substitue.

    Its very filling and tastes fantastic.

    Twice baked potatoes:

    Two red russets or Idahos, washed

    any filling you can imagine, broccoli, olives, peppers, beans, soy cheese, etc

    garlic, chives, salt pepper

    What you do is pop the potatos in the microwave, after forking them, until theyre done [about 3-5 minutes]

    Take a spoon and scoop out the middle leaving a shell and a medium sized opening, mix ingredients together, spoon it back into the shell and re-microwave it.

    If you eat sour cream [since you dont consume cheese but youre not vegan Im not sure about that one] you can top it off with a little dollop and dig in.

    Delicious.

  6. I'm not sure which genre of food you are looking for, but the following might be simple and quick:

    veggie fajitas: purchase some wheat or flour tortillas. buy some onions, green and red bell peppers, jalapenos and soy chicken or beef strips). saute everything together in the pan and you're done!

    black bean burritos: buy a couple cans of black beans and drain them. buy some flour or wheat tortillas. choose your fave ingredients (such as white or yellow onion, jalapenos, green peppers, tomatoes -if you dare - lol) and chop everything up. place the beans and the veggies in a medium-sized saucepan and heat. place finished product on the tortillas.

    spaghetti: or any type of pasta with marinara sauce

    large tossed salad with baked potato

    veggie stir fry: use frozen veggies and some brown rice

  8. How about a refreshing summer meal with Greek Lentil Salad and a grain of your choice (quinoa, barley, rice, millet, bulgur, etc.)

    Greek Lentil Salad:

    1 cup green or brown lentils, picked over and rinsed

    1-1/2 cups cherry tomatoes, sliced in half

    1 cup diced cucumber

    1 cup chopped green onions

    1 Tbs. dried dill OR 1/3 cup fresh chopped dill

    Dressing:

    1-2 garlic cloves

    1/2 tsp. salt

    1/2 cup olive oil

    1/4 cup lemon juice

    1/4 tsp. ground black pepper

    Here's how you throw it together:

    -Place lentils in saucepan and cover with water. Bring to a simmer, then reduce heat to med.-low and cook, partially covered, 25-30 minutes or until lentils are tender. Drain excess liquid, if needed.

    -To make dressing: place garlic cloves on cutting board. Sprinkle with salt and mash with the side of a knife into a paste. Transfer to a bowl and whisk in olive oil, lemon juice, and pepper.

    -To make salad: Toss lentils in dressing. Cool to room temperature, then stir in tomatoes, cucumber, green onions, and dill.

    -Add more salt and pepper, if desired.

  9. FRIED POTATOES  

    3-4 potatoes

    1/4 cup oil, approximately

    1 onion, chopped

    2 cloves garlic, chopped

    1/2 pound fresh mushrooms, unsliced (sliced, canned mushrooms can be substituted, if need be)

    1/4 cup hulled sunflower seeds

    salt and pepper

    Heat oil, add potatoes that have been washed and thinly sliced. Cook for 10-15 minutes, then add mushrooms, onions, garlic, and sunflower seeds. Salt and pepper to taste. Cover and cook until done, uncover and brown.

    *This is a vegetarian dish I first tried at the Uptown Cafe in Bloomington, IN. Michael's fries were heavenly. This is the closest I could come to making them. It's been a family favorite for over 20 years.

My idea of easy and cheap would be a chunky garden tomato sauce over whole wheat pasta.  All I do is add sauteed roughly chopped zucchini, summer squash, peppers and onions into a good jarred tomato sauce (I like Barilla) and let it simmer for a little while.  Saute the veggies in a little EVOO and chopped garlic (from a jar).

  12. Vegetarian Crockpot Layered Dinner Recipe

    Ingredients

    6 potatoes -- sliced

    1 large onion -- sliced

    2 carrots -- sliced

    1 green pepper -- sliced

    1 zucchini -- sliced

    1 cup corn -- frozen or fresh

    1 cup peas -- frozen or fresh

    Any other favorite veggies

    Sauce

    2 1/2 cups tomato sauce

    1/4 cup Tamari soy sauce -- low-sodium

    1 tsp thyme -- ground

    1 tsp dry mustard

    1 tsp basil

    2 tsp chili powder

    1/2 tsp cinnamon

    1/8 tsp sage

    2 Tbs parsley

    Directions  

    Layer vegetables in crock pot in order given.

    Mix together ingredients for sauce and pour over vegetables.

    Cook six hours on high or 12 hours on low.

    This tastes delicious!

  14. Grill large portobello mushrooms on the BBQ - brush with olive oil & sprinkle with garlic salt and oregano.....Put them on onion rolls with lettuce, tomato (well, maybe not:), onions, sliced avocado......
