  1. **************Super Cheap Meatloaf ********************

    This is from Cheap. Fast. Good!

    2 eggs

    1/2 cup tomato juice or V8

    1/4 cup ketchup

    1 Tbs Worcestershire sauce

    1/2 tsp each salt and pepper

    1 cup bread crumbs

    1/2 cup quick cooking oatmeal

    6 cloves garlic, minced

    1/2 cup fresh parsley or 1/4 cup dried

    1 carrot, minced

    2 ribs celery, minced

    1/2 green pepper, minced

    1 onion, minced

    1 pound ground beef

    Preheat the oven to 350.

    Mix together the eggs, tomato juice, ketchup, Worcestershire sauce, salt, and pepper. Stir in the bread crumbs and oatmeal.

    You can chop the vegetables by hand or in a food processor. Then mix them into the mixing bowl and stir well. Finally, add the meat and mix together with your hands. (If you'd rather use a mixer, just be sure not to overmix.)

    Spray a loaf pan with cooking spray and spread the meat in it.

    Top with your choice of toppings. I like:

    2 Tbs brown sugar

    2 Tbs mustard

    1/4 cup ketchup

    1 Tbs red wine vinegar

    This is actually two of their suggested toppings combined so feel free just to use brown sugar and mustard (maybe adding a bit more mustard) or ketchup and wine vinegar.

    Bake 1 hour and 10 minutes, then let stand 10 minutes before slicing.

    ********* Easy Baked Chicken and Rice  *************

    1 can (10 3/4 oz) cream of chicken soup

    1 cup water

    3/4 cup uncooked rice

    1/2 tsp. paprika (divided)

    1/2 tsp. pepper (divided)

    2 boned, skinned chicken b*****s

    1/4 tsp. salt

    Preheat oven to 375.

    In an 8”x8” baking pan, mix the soup, water, rice, 1/4 tsp. of paprika, and 1/4 tsp. of pepper. Sprinkle the chicken b*****s with salt, 1/4 tsp. pepper and 1/4 tsp. paprika, then place on top of the rice. Cover with foil (tightly). Bake 45-60 minutes.

  2. Easy Cheap and Yummy Casserole

    1 (28 ounce) can baked beans

    2 (16 ounce) packages hot dogs, sliced

    1 (7.5 ounce) package corn bread mix

    Preheat the oven to 400 degrees F (200 degrees C).

    Pour the can of beans into a 9x13 inch baking dish so they cover the bottom. Arrange hot dog slices so they cover the beans as completely as possible. If too much juice seeps through to the cornbread, it will take longer to cook. Prepare cornbread mix according to package directions. Spread the batter evenly over the hot dog layer.

    Bake for 35 to 40 minutes, or until cornbread is cooked through. A toothpick inserted into the center should come out clean. serves 8.
