Question:

Cheese on top of Chimichangas...?

At a local Mexican restaurant they put this white cheese on top of their chimis... it's sooo good.. they don't even melt it.. it's just finely shredded... but it melts on top of the fried tortilla... unlike some cheeses it doesn't have that gritty feel when it melts.. I have no clue what it is but I have a craving for it.. they also use it in their cheese dip for using with their chips... I've tried Monerey Jack but it doesn't take like it's that... thanks in advance..and sorry I can't be more help..

  1. It might be cotija or queso blanco, which melts very well.  


  2. i think its funny that ppl consider tex mex real mexican in true mexican dishes they really don't use a lot of cheese except for occasionally goat cheese, or cojita cheese. I wouldn't be surprized however if at the restaurant its just plain old mozzerella cheese. Next time ur in there u should ask them what kind of cheese it is and where you can find it.

  3. Queso Blanco.

    You might have to look in your gourmet cheese section or closer to the sour cream in the dairy section.
