Question:

Cheesecake baking time?

I'm scaling up a cheesecake recipe from an 8in by 1.75 to 10in by 2.25. The original baked for a bit more than 45 min at 375F.

Just need a rough estimate to keep me from checking it too often, and a heads up if any problems are anticipated.

  1. The average baking time for a cheesecake is one hour at 350.


  2. THERE IS NO DEFINITE ANSW FOR THAT. IT DEPENDS ON YOUR OVEN'S CAPACITY. IT HAS SOMETHING TO DO WITH BTU AND WATTAGE. MINE BAKED FOR 90MINS. 45 MINS OVEN ON AND 45 MINS OFF. YOUR RECIPE IS ALSO A FACTOR. IF ITS TOO LIQUID THEN IT MIGTH TAKE A WHILE.

  3. If it will remain as thick as the original, I'd lower the oven temp by about 50ºF (so the top doesn't burn) and so you can give the inside middle time to firm up... at least an hour and a half.

  4. go to www.foodnetwork.com..search cheesecakes and compare,,there are as few that cook at low temps for about 3hrs..
