How do you know when cheesecake is real, from a resturaunt?

Well, there are a couple of different kinds of cheesecake, but I'm going to assume you mean New York cheesecake, since that's the most common one.  'Real' cheesecake can never be mistaken for the fake stuff.  Good cheesecake should have a light, creamy texture that melts in your mouth; it should never be spongy or dry tasting.  Fake cheesecakes (jello or other imitators) are too heavy and *too* creamy, not light and fluffy.  Good cheesecake is sweet but not overly sweet and should have a distinct cream-cheese flavor to it, but with a little bit of a 'tang', while fake cheesecake may taste bitter, cloying, or kind of bland.  The best way to tell good cheesecake from bad is by the aftertaste.  The aftertaste of bad cheesecake is usually either bitter or overly sweet, making you reach for the water.  Good cheesecake seems to melt on your tongue, leaving a rich aftertaste that leaves you wanting nothing but another bite.
