I'm wanting to get a set of Wusthof Knives for an upcoming chef.
(1) I need to know the real difference between the Wusthof lines..,like the "Classic" and "Culinar"...and etc. Which is the best? Which one would you get or prefer?
(2) I know a great chef only buys open stock...but can you buy like a block set and not use the block (I know the block is not good to use)...would it be cheaper to buy a block set and not use the block, or just buy them individually??

Is there a real difference to buy this and not buy them individually?? Which is better??
