Plant starches are amylose and amylopectin. Amylose differs fromamylopectin in that amylose is

  1. At a guess i would say a sweetener. anything ending in 'ose' is normally a sugar and sweet to taste eg glucose, sucrose, fructose, lactose. so i am assuming amylose is one too.

    we have a protein called amylase in our saliva which is the first step our body takes to break down sugars. similar word to amylose.

    Amylopectin is what keeps fruit hard before it ripens and not ripe fruit is also not very sweet. I'm pretty sure it turns into amylose when ripening.
