for starting it is chiapas

Well in Chiapas u will find important archeological places like Palenque and beautiful natural attractions like the Cañón del Sumidero, Agua Azul and Misol Ha Water Falls. Besides this u can also visit indian comunities and c the way they live, the particular religion they practice and buy really nice handicrafts....Chiapas also has good coffee :P, u can buy some.

There has been a lot of civil unrest and protest there over the past few years, I don't know if it has calmed down or not yet.  I would do some research before going.
