Chicken temperature?

Ok... i am making my spicy fiesta chicken... but i don't remember the temp. for the inside of the chicken... what is a good temp? i have the oven at 400F

i don't mean to sound s****.... but the recipie is good if you like spicy... email me at liboby1985@yahoo.com if you want it... :)

  1. Chicken must reach a minimum internal temperature of 165F.

    So in order to reach that in an oven, you want it at least 350F for about 45-50 minutes.

I learned this past year when I had my Foodservice Sanitation License renewed that they have actually changed the temp. requirements for chicken and poultry because of Salmonella and other foodborne illnesses,the recommended internal temp of any type of poultry now is 180 degrees,and remember to keep the thermometer away from the chicken bones when temping because touching the bones will give you a false reading,(the bones hold in the heat) And beef is still 165 degrees,but I always cook everything (except for chicken and poultry) to an internal temp of 170-175 degrees just to be on the safe side.It is better to be safe than sorry,I say.
