Chilled watermelon soup?

I go to a nice szechaun restaurant and at the end of the meal they bring me a "soup" of clear watermelon juice with small pieces of watermelon. If you have a clue what I am talking about a recipe would be nice

I am a former chef, and it is made like tomato consumme, you blend the tomato's or watermelon into a mush, then put the mass into a cheesecloth, muslin or lined container and allow the clear liquid to drain out into annother dish or bowl without the solids, then you sweeten and flavour it, at serving time you cut the garnish, as you said a bit of watermelon or with the tomato's just some of those usually a yellow hybrid and a garnish of green onions or chives.

    For the watermelon, add a bit of pomegranate juice for colour and a few pomegranate seeds with the watermelon as garnish, sweeten it with honey, even a splash of booze if for an adult crowd, vodka or an orange one like Triple Sec or Cointreau

    8 cups finely diced seedless watermelon 1 medium cucumber, peeled, seeded and finely diced 1/2 red bell pepper, finely diced 1/4 cup chopped fresh basil 1/4 cup chopped flat-leaf parsley 3 t

    Step2Mix watermelon, cucumber, bell pepper, basil, parsley, vinegar, shallot, oil and salt in a large bowl. Puree 3 cups of the mixture in a blender or food processor to the desired smoothness;

    Step3transfer to another large bowl. Puree another 3 cups and add to the bowl. Stir in the remaining diced mixture. Serve at room temperature or chilled.

    Yield: 6 servings
