Chinese cuisine is exceptionally varied and I am not aware of many attempts to genuinely fuse it with another cuisine style, as can happen e.g. with French/Japanese (as at Myu in London, or Tetsuya in Sydney).  Some restaurants have chosen to simplify it to make it more accessible (e.g. no unfamiliar textures like duck feet or shark fin) such as Yauatcha and Hakkassan, though I am not sure these really count as "fusion".  Details of these places are reviews of them are on my web site below.
