Question:

Chinese beef and broccoli?

What is the recipe to make the beef that there is in the Chinese food along side the broccoli. Just the beef and the sauce that is on it (I think it is regular soy sauce IDK). The regular beef that is in most Chinese food orders.

    *3/4 pound lean beef

    Marinade:

    * 1 tablespoon rice vinegar (substitute rice wine if desired)

    * 1 teaspoon sugar

    * 1 teaspoon soy sauce

    * 1 tablespoon water

    * 1 tablespoon cornstarch

    Sauce:

    * 2 tablespoons oyster sauce

    * 1 tablespoon light soy sauce

    * 1 tablespoon dark soy sauce

    * 1 tablespoon water

    Thickener:

    * 1 teaspoon cornstarch mixed with 1 tablespoon water

    * 2 garlic cloves, minced

    Cut the beef across the grain into thin slices. Add the marinade ingredients, adding the cornstarch last (use your fingers to rub it in). Marinate the beef for 30 minutes.

    While the beef is marinating, prepare the sauce:  mix together the oyster sauce, light soy, dark soy, and water in a small bowl and set aside. In another small bowl, mix the cornstarch and water thickener and set aside.

    Heat the wok and add 1 cup oil. When the oil is medium-hot (between 300 and 325 degrees F.), add the beef. Blanch the beef by letting it lay flat for 30 - 40 seconds, and then stirring to separate the pieces. Remove the beef when it changes color and is nearly cooked (the entire process takes 1 - 2 minutes).  Remove the beef from the wok and drain on paper towels.

    Clean out the wok with paper towels.

    Add 2 tablespoons oil to the wok. When the oil is hot, add the crushed garlic and stir fry briefly until aromatic.  Add the beef. Add the sauce and cornstarch mixture in the middle of the wok and stir quickly to thicken. Mix everything together and serve hot over steamed rice.

    CHINESE BROCCOLI BEEF

    INGREDIENTS........

    1/4 cup all-purpose flour

    1 (10.5 ounce) can beef broth

    2 tablespoons white sugar

    2 tablespoons soy sauce

    1 pound boneless round steak, cut into bite size pieces

    1/4 teaspoon chopped fresh ginger root

    1 clove garlic, minced

    4 cups chopped fresh broccoli

    DIRECTIONS

    In a small bowl, combine flour, broth, sugar, and soy sauce. Stir until sugar and flour are dissolved.

    In a large skillet or wok over high heat, cook and stir beef 2 to 4 minutes, or until browned. Stir in broth mixture, ginger, garlic, and broccoli. Bring to a boil, then reduce heat. Simmer 5 to 10 minutes, or until sauce thickens.

    We like our beef broccoli with the following fried rice....

    CHINESE FRIED RICE

    INGREDIENTS..........

    2 cups enriched white rice

    4 cups water

    2/3 cup chopped baby carrots

    1/2 cup frozen green peas

    2 tablespoons vegetable oil

    2 eggs (i add 4 eggs to mine)

    soy sauce to taste

    sesame oil, to taste (optional)

    DIRECTIONS

    In a saucepan, combine rice and water. Bring to a boil. Reduce heat, cover, and simmer for 20 minutes.

    In a small saucepan, boil carrots in water about 3 to 5 minutes. Drop peas into boiling water, and drain.

    Heat wok over high heat. Pour in oil, then stir in carrots and peas; cook about 30 seconds. Crack in eggs, stirring quickly to scramble eggs with vegetables. Stir in cooked rice. Shake in soy sauce, and toss rice to coat. Drizzle with sesame oil, and toss again.

    Duck sauce goes very well with this..

  3. Beef and Broccolt stir fry

    1 1/2 tbsp soy sauce

    3 tbsp corn starch

    2 garlic cloves peeled and minced

    2 tbsp toasted white sesame seed

    1 1/2 tbsp chinese rice wine

    1 1/2 tsp salt

    1 lb. broccoli florets

    1 tbsp freshly chopped ginger

    1 bunch of green onions sliced into thin rings

    1 cup beef broth

    3 tbsp peanut oil

    1 1/2 lbs of beef chuck cut into1 and 1/8 " slices

    stir the corn starch , rice wine and soy sauce in large bowl,add the meat to the mixture and stir to coat it

    let the meat marinate for 30 minutes

    prepare the rest of you ingredients while the meat marinates so you will have everything read when you start to cook

    heat the oil over medium heat in a wok or large skillet, then add the ginger , salt and garlic

    cook while stirring till the garlic is golden but not brown, Increase the heat to medium high and add you meat with marinade

    stir fry the beef for about 4 minutes.Add the broccoli to the pan and stir fry for about 2 minutes

    add the broth to the pan and allow it to boil.  Cover the pan and lower the temp to medium, and cook for about 4 minutes or until broccoli is tender

    check the consistency of the sauce,if too thin mix 1 tsp corn starch with 2 tsps water and add a little at a time

    stir and allow at least 45 seconds to thicken, if it does not repeat process

    serve over steamed or fried rice, garnish with sesame seeds and green onions
