Chinese buffet chicken recipe?

I am looking for a recipe for "champagne chicken". I have had it at several different Chinese buffet restaurants. It's basically fried chicken tenders with a creamy sauce (sour cream base I think). Thanks for your help!

  1. CHAMPAGNE CHICKEN

    Yields 4 servings.

    2 tbsp. all-purpose flour

    1/2 tsp. salt

    Dash of pepper

    4 chicken breast halves, skinned and boned

    2 tbsp. butter, melted

    1 tbsp. olive oil

    3/4 c. champagne or dry white wine

    1/4 c. sliced fresh or canned mushrooms

    1/2 c. whipping cream

    Combine flour, salt, and pepper. Lightly dredge chicken in flour mixture. Heat butter and oil in a large skillet; add chicken and saute about 4 minutes on each side. Add champagne; cook over medium heat about 15 minutes or until chicken is done. Remove chicken and set aside. Add mushrooms and whipping cream to skillet; cook over low heat, stirring constantly just until thickened. Add chicken and cook until chicken is heated thoroughly. Garnish chicken with chopped fresh parsley.

    ALMOND CHAMPAGNE CHICKEN

    Serves 4

    Ingredients

        * 4 chicken b*****s, boned and halved

        * 1/2 cup butter

        * 2 tablespoons finely chopped shallots

        * 1/4 pound chopped fresh mushrooms

        * 2 tablespoons flour

        * 1 cup champagne or dry white wine

        * salt and pepper

        * 1/3 cup whipping cream

        * 1/2 cup sliced toasted almonds

    Directions

    Place chicken b*****s in a shallow baking dish and pour 1/4 cup melted butter over them.

    Bake at 350 degrees for 30 minutes until tender.

    Melt remaining 1/4 cup butter in a saucepan.

    Add shallots and chopped mushrooms and saute over low heat until soft but not brown.

    Sprinkle with flour; add the wine, stirring constantly over medium heat until sauce is thickened and alcohol is evaporated from wine.

    Season with salt and pepper.

    Transfer chicken b*****s to a heated serving platter to keep them warm.

    Stir pan drippings into the sauce and add cream.

    Heat through over low heat.

    Spoon sauce over chicken and sprinkle with toasted almonds.
