  2. No, but this recipe sounds really interesting!

    Fruit ''Sushi'' on a Stick

    2 cups short-grain rice

    2 1/2 cups milk

    1 teaspoon honey

    1/4 cup white balsamic vinegar

1 coconut, peeled and cut in half

    2 tablespoons brown sugar

1 package rice paper or seaweed

1 pineapple, peeled and cut into thin pieces

    4 strawberries

    Equipment

    Bamboo sushi mat, for rolling

    4 wooden skewers

Rinse rice in water until the water runs clean. Drain well in a colander. Place rice in a pot with a tight-fitting lid and add milk. Bring to a boil over medium heat. Reduce heat to medium-low and simmer for 5 minutes. Reduce heat to low and cook about 15 minutes, or until milk has been absorbed. Remove from heat and remove lid.

In a small mixing bowl, combine honey and balsamic vinegar. Spoon mixture over rice. Cover with a damp towel and allow the rice to cool, stirring occasionally.

To make coconut coating, place coconut halves on baking sheet and sprinkle with brown sugar. Cook in a 350-degree oven for about 10 minutes, or until coconut turns light brown.

To assemble, place rice paper or seaweed on a flat, clean surface. Spread rice mixture over the seaweed or rice paper, about 1/4 inch thick. Try to keep rice as fluffy as possible. Flip the paper or seaweed over so the rice is face down. Fill the middle with pineapple. Use the sushi mat to roll the sushi into a tube shape.

Shred coconut and place on a flat, clean surface. Roll the sushi in the coconut. Cut the roll into 1-inch pieces.

Thread each skewer as follows: pineapple, sushi piece, pineapple, sushi piece, strawberry.

    Make 4 servings
