Chinese "Brown sauce"?

I am wondering about the "Brown sauce" served at Chinese restaurants...

The type that is usually served with steamed vegetables, and bean curd, or tofu.

Is it vegan?

Is it fattening?

And...

What are the ingredients?

  2. Chinese Brown Sauce is actually a name of an accompaniment served with many popular Chinese dishes.

    3/4 cup beef broth (beef bouillon cubes can be used)

    1 tablespoon plus 1 teaspoon oyster sauce

    1 teaspoon dark soy sauce

    1/2 teaspoon sugar

    1 tablespoon cornstarch

    Preparation:

    Combine the above ingredients in order and bring to a boil, stirring. Yields about 1/3 cup.

It could be Oyster sauce or Hoisin Sauce, which is sweeter and more complex, oyster sauce is made with oysters and other ingredients, but they do have a veggie based one made with Shiitake mushrooms, Hoisin is made with veg like pumpkins and soya beans, sweetened with a rock sugar and has a bit of a star anise flavour, it is used with alot dishes and as a glaze for meat, most Vietnamese places have it on the table in a jar or squirt bottle also.

    Just to follow up that sauce is a combo of stock, soya sauce and other one like I mentioned and thicken with cornstarch or tapioca, it is most like a vegetarian or non one, as they may use meat broth, I worked with Chinese chefs and in operatins with Asian restaurants in the hotels.

  4. it could be soy sauce that you're talking about, or maybe oyster sauce based.  you will be able to find many varieties in the supermarket, or grocer.  just look at the ingredients on the back.

    maybe some soy sauce is vegan, oyster sauce obviously no.

    it is not fattening, just salty.

  6. Soy Sauce.

    No its not fattening. It is a fermented sauce made from soybeans, its roasted grain, water and salt. Those are lighter ones & the darker ones have been aged longer & molasses has been added to those or sugar so it appears thicker.
