Question:

Chinese soup I think its called Dumpling Soup?

I recently went to a Chinese buffet and there is a soup they have there which i think is called Dumpling soup and i love the broth especially. Does anyone know what it is really called, how to make it and the ingredients I would need?

It is really a simple concoction.  Most Won Ton soup is simply chicken broth, flavored with a touch of soy sauce, a little roasted sesame seed oil, and the flavor of bok choy, which is often included.  The hard part is the won tons themselves!  If you live near an Asian grocery, they can be found frozen.  Alternately, cooksillustrated.com has an excellent recipe for pork dumplings which, if rolled differently, could easily be substituted.  Trust me, it is easier to order it from your local Chinese restaurant...

  3. The name won ton means swallowing a cloud, and the wonton floating in this popular soup are thought to resemble clouds. This recipe for Won ton Soup serves 4.

    Prep Time: 15 minutes

    Cook Time: 15 minutes

    Ingredients:

        * 18 - 24 won ton wrappers

        * Filling:

        * 1/2 pound boneless lean pork, chopped finely

        * 1 tablespoon soy sauce

        * 1 tablespoon oyster sauce

        * a few drops sesame oil

        * 1 teaspoon sherry

        * 1/2 teaspoon sugar

        * 1 green onion, finely minced

        * 1 teaspoon cornstarch

        * 2 dashes of white pepper

        * Other:

        * Water for boiling won tons

        * 4 1/2 - 5 cups chicken stock

        * green onion, thinly sliced, as desired

        * a few drops sesame oil (optional)

    Preparation:

    Combine all the filling ingredients in a bowl, mixing well. Lay one won ton skin in front of you. Cover the remaining won ton skins with a damp towel to keep them from drying out.

        Filling the won tons: Moisten all the edges of the won ton wrapper with water. Place a heaping teaspoon of won ton filling in the center.

      Fold the won ton wrapper in half lengthwise, making sure the ends meet. Press down firmly on the ends to seal. Use thumbs to push down on the edges of the filling to center it. Keeping thumbs in place, fold over the won ton wrapper one more time. Push the corners up and hold in place between your thumb and index finger. Wet the corners with your fingers. Bring the two ends together so that they overlap. Press to seal. The finished product should resemble a nurse's cap. Repeat with remaining won tons.

    Alternate method: Place the teaspoon of filling in the middle of the wrapper and twist to seal. The final result should resemble a money bag or drawstring purse.



    Boiling the won tons: Bring a large pot of water to a boil. Add the won tons, making sure there is enough room for them to move about freely. Let the won tons boil for 5 - 8 minutes, until they rise to the top and the filling is cooked through. Remove from the pot with a slotted spoon.

    To make the soup: bring the chicken stock to a boil. Add the won tons and bring the soup back to a boil. Add the green onion, remove the pot from the heat and add the sesame oil, stirring. Ladle into soup bowls, allowing 6 won tons per person.

    INGREDIENTS...........

    2 (14.5 ounce) cans chicken broth

    1 tablespoon cornstarch

    1 egg, lightly beaten

    2 tablespoons chopped green onion

    DIRECTIONS

    In a medium stock pot, slowly heat chicken broth and cornstarch. Stir constantly until thickened.

    Pour beaten egg into soup and stir once around stock pot very gently, in order to break up egg.

    Remove soup from heat immediately, divide into four portions and garnish with green onions.

    WONTON SOUP

    INGREDIENTS............

    1/2 pound boneless pork loin, coarsely chopped

    2 ounces peeled shrimp, finely chopped

    1 teaspoon brown sugar

    1 tablespoon Chinese rice wine

    1 tablespoon light soy sauce

    1 teaspoon finely chopped green onion

    1 teaspoon chopped fresh ginger root

    24 (3.5 inch square) wonton wrappers

    3 cups chicken stock

    1/8 cup finely chopped green onion

    DIRECTIONS

    In a large bowl, combine pork, shrimp, sugar, wine, soy sauce, 1 teaspoon chopped green onion and ginger. Blend well, and let stand for 25 to 30 minutes.

    Place about one teaspoon of the filling at the center of each wonton skin. Moisten all 4 edges of wonton wrapper with water, then pull the top corner down to the bottom, folding the wrapper over the filling to make a triangle. Press edges firmly to make a seal. Bring left and right corners together above the filling. Overlap the tips of these corners, moisten with water and press together. Continue until all wrappers are used.

    FOR SOUP: Bring the chicken stock to a rolling boil. Drop wontons in, and cook for 5 minutes. Garnish with chopped green onion, and serve.
