  1. CHINESE TOMATO BEEF CHOW MEIN

    3/4 lb chow mein noodles

    cooking oil (divided use)

    3/4 lb flank steak, cut into thin strips across the grain

    salt (divided use)

    1 onion, sliced

    3-4 ribs celery, sliced thinly on a diagonal

    1/2 lb bean sprouts, rinsed and dried thoroughly

    3/4 t curry powder

    1/2 C ketchup

    1/2 C water

    1 T cornstarch

    2 T sugar

    2 t vinegar

    1 t salt

    6-8 medium ripe tomatoes, cut into chunks (more if you really like tomatoes)

    Parboil the noodles until al dente, drain, rinse with cold water, and drain again. Toss with a tablespoon or so of cooking oil to coat. Spread noodles in a thin layer on a rimmed baking sheet and put in a preheated 400F oven for 20 minutes. The noodles will stick together in a matrix. Turn the matrix over, and cook another 10 minutes or until lightly browned. Cool, and break/tear apart. Set aside.

    Heat wok until crazy hot. Add a tablespoon of oil, a pinch of salt, and stir-fry the flank steak about a minute. Remove beef from wok and set aside.

    Reheat wok. Add another tablespoon of oil, another pinch of salt, and the onion. Stir-fry for a minute, add celery. Stir fry another minute, and add bean sprouts. Stir fry a minute more, and remove vegetables and set aside (can be combined with the meat).

    Reheat wok. Combine curry powder, ketchup, water, cornstarch, sugar, vinegar, and salt, and add to the wok. Stir, allow to thicken slightly, and return flank steak and vegetables to the pan. Stir in the tomatoes. When the tomatoes have just heated through, add the noodles. Remove from heat, stir to combine, and serve


  2. beef chow mein shouldn't be cooked with tomato it just doenst taste right!
