  1. Chinese! It is a custom in most places in Southern China that we wrap stir fried chopped chives + bamboo shoots / seafood / meat with different kinds of spring roll wrappers then deep fry, steam, bake .. in early April (while chives and bamboo shoots are in season).

We have various kinds of dumplings, mostly we refer dumplings as northern Chinese food where they grow wheat.

  2. Chicken and beef dumplings are chinese.  Spring roll or egg roll is not Chinese or Japanese their actually Vietnamese .

  3. Spring rolls are Chinese - but they are eaten in Japan too.

Both Chinese and Japanese have dumplings.  Chinese usually call them potstickers, where as the Japanese call theirs gyoza.  Both are made with a mixture of cabbage (usually) and meat.  Gyoza sometimes adds garlic to their filling.

Potstickers are usually larger than gyoza and use a thicker covering.  Gyoza uses a thinner covering, and are about half the size of a potsticker.  Potstickers can be boiled, steamed, pan fried or deep fried.  They can also be added to soup.  Gyoza are almost always pan fried.

  4. Most cultures have some food item similar to a dumpling which consists of meat and/or vegetables wrapped in some sort of dough.  Wontons and dumplings are typically Chinese but have been Americanized.  Gyoza are Japanese "dumplings" with a smaller amount of meat and encased in a thin dough.  They have a half moon shape typically and are pan seared on one side.

Egg rolls are again westernized Chinese, Vietnamese cuisine includes spring rolls and crystal rolls which are wrapped in a raw rice paper and not fried.  Though I know a good deal about Japanese cuisine, I am not familiar with a food item that is similar to an egg roll in their diet.  I could be wrong though.

  5. Dumplings are a middle/northern Chinese dish...i know that for a fact.. and actually pork are more common

Spring rolls are more vietnamese in origin as far as I know.. although they are in china as well

  6. They can be both, depending on how they are made (various cooking styles) and with various different ingredients.

Also, depending on whether they are made in the authentic Chinese and Japanese style or Chinese American and Japanese American styles, they will also differ.
