how much should i charge to clean up a 80'x40' yard full of weeds/dog p**p? What is fair for both me and the customer

Will you keep it up or is this just a one time thing?

If it's just a one time I'd say you can charge a little more. Like $50.00

If you're maintaining it every week, explain the initial clean-up will cost a bit more, like $40.00 to get the yard up to par then you would just charge $25.00 a week.

I don't know where you are & these rates do make a difference in different areas.

do this thou, work out a hourly rate, work out the hourly rate to the amount of work you think there is and price it,
