Cilantro pesto. What are some GREAT ideas to do with it?

I acquired some on Sunday at this great little Farmers Market! Everything there was so fresh, great smells, great people, beautiful day. I have to say I really enjoyed myself.

  2. It would top nachos nicely :)  Topping pasta especially a cold pasta salad.  Grill chicken b*****s with lime and chili seasoning, and then top with the pesto, serve with corn and a fresh fruit salad sounds like dinner to me.


  3. Cilantro Pesto is an oxymoron. I'm glad you enjoyed the farmers market and i too enjoy them and love cilantro and pesto as well. However, a pesto made with cilantro is not pesto at all. I may sound like a food snob but once the cilantro begins to slowly oxidize in the oil it has a nasty flavor. This is not true of basil and is why basil is the main ingredient in pesto. The word pesto (which is Italian, by definition means made with basil) So those who say i have roasted red pepper or sun dried pesto are just fooling themselves as well as the rest of us. I will say this though that both of those concoctions are pretty dang tasty, but they are sauces and not pestos.

    Try your cilantro sauce on a quesadilla or some nacho's - avoid the pasta though...

  4. i LOVE pesto.  

    In sandwiches and on pasta.  It can also be tasty mixed with sour cream or cream cheese for a great spread/dip on soft breads or chips.

  5. we like to grill bratwursts and smear it on them

    or grill the bratwursts, then slice them up and put it over pasta with the pesto

    or its great on grilled shrimp

  7. A whole wheat bagel toasted with pesto and fresh mozzarella (melted of course). That would be yummy...

  8. that's some strong stuff, it will go a long way... i would use it in any starch, ie, rice or pasta, in a salsa with corn and black beans would be wonderful, and you could use it in a marinade  for chicken or pork to put on the grill... mmmm

  9. Put it on hot bread and melt some cheese on it, use it for a topping for baked salmon, add it to pasta with chopped olives.

  10. stuff it in chicken with cheese and bake it.

    add garlic to it and make garlic bread with butter

    cook it with some rice.... it will make it flavorful.

    add some chicken and veggies and toss with pasta for a yummy pasta salad

    make pita chips and dip them in the cilantro pesto

    this type of pesto is great with chicken and onions sauteed and topped with cheese in a burrito..

  11. Swirl a teaspoon of it in chicken tortilla soup.  I use regular basil pesto in chicken tortillini soup and it makes it taste very gormet

  12. MMMMMM...try using it as a sauce on pasta. Or as a substitute on pizza instead of red tomato sauce. That would be so good! Or you can use it as a snack by putting some cream cheese and the pesto on crackers.

  13. make pico de gio... its a salsa dip... tomato, onion, cilantro, fresh lime juice, and salt to tast
