Coffee help?

I know this is weirder but I used to work as a barista and made excellent latta's mocha's ect... But it's been a few years since then and I can not make a cup of coffee at home to save my life.

I have a Mr. Coffee machine, I usually only try to make about 3 cups of coffee.

I have the new "Mr Coffee" coffee grinds. (I know the size of the grinds make the measurement different) So the grinds are medium size.

Would you please help me make a good cup of coffee. Don't make it to stong.

  1. 1.  Grind your beans finer.

    2.  Buy a coffeemaker with a cone-shaped filter.

    3.  Use unbleached cone filters.

    4.  Use cold water when you fill the machine.

    a mr coffee is a "basket" type filter machine, and will never make good coffee.  Medium grind is only used in PERCOLATORS.  

    If you have no way to do the above suggestions, use one tablespoon of medium grind coffee for every cup of coffee you want.  That's all I can recommend with you have to work with.


  2. I would start with premium coffee beans and grind them fresh, right before you brew.  Also, try a press pot, rather than drip, for richer tasting coffee.

  3. Measure the water and coffee for a full pot. The first water that comes through is not hot enough to get the flavor out of the ground coffee. You might have to toss half a pot a day, but is much better than tossing the machine and the coffee out.

    I pinch pennies too tightly to give up the Mr Coffee and other of the less expensive coffee machines. I will not pay the cost of a bunn as it will die as quick as the Mr Coffee, et al.

  4. First things first. Mr. Coffee-Chinese built junk-does not reach the proper temperatures to brew coffee correctly. IF you can find a chinese made P.O.C. coffee machine that DOES reach 190-200f You are lucky indeed.

    My method for making good coffee minus the over priced chinese junk machines, involve heating the water to the boiling point, then allow it to set a few seconds off heat then pour it over your grounds using a SWISS GOLD cone filter. If you grind the coffee correctly you can also eliminate the use of paper filters.

    Also you MUST have fresh coffee beans or it won't taste any better than the junk from the Folgers can that has set on a market shelf for 7 months (or more), pre-ground...

    I get by this problem by roasting my own coffee beans. That way I KNOW they are fresh.

    If you are on a budget for a new coffee maker, I would at least go for a $100 Bunn in order to get decent coffee.

    Mr. Coffee never gets his water up to 190 degrees, which is essential for a good cup.

    Here are some other things you are going to want to try:

    Grind-You say you have the perfect grind already, so I guess you can skip this step.

    Proportion- Probably the most important part of brewing. I like my coffee strong, so I recommend 2 Tablespoons for every 6 oz of water. If you don't like it strong, as you say you might want to go down to 1 Tablespoon. If that is too weak, just work your way up until you find the taste you like.

    Freshness- Another very important step for coffee. Try to refrain from grinding your coffee until the second you brew it. Whole beans stay a lot fresher than grinds---grinds go bad at an incredibly fast rate. I also recommend keeping your beans away from the sun, in an air-tight container. You are safe to freeze the beans as long as they are whole. If they are grinds, never ever freeze or put them in the fridge! If you must grind your coffee way before, it's still important to keep them away from light and in a container.

    Last but not least, you want good water. Coffee is 98% water, so at least use filtered water. If your tap isn't filtered, I recommend buying bottled water. I know they say that bottled is basically tap, but most bottled water is filtered quite a bit.
