Cold Japanese Cuisine Ideas?

Hello!

I am a caterer and am always looking for new ideas for room temperature food. I am putting together bento boxes for corporate lunches, but they absolutely must be room-temperature...which means absolutely NO raw food (raw sushi) and no hot dishes.

Any creative ideas such as cold somen noodles? Recipes please!

Here is what I have so far...

-Various "cooked" sushi rolls

-Japanese-style garden salad with various Japanese-inspired dressings

-Edamame

Any other ideas? Remember the RULES: Everything must be fully cooked and room-temp.

  3. This is probably my favorite way to eat carrots - cut into matchstick size, stir fried in sesame oil until crisp-tender with some red pepper flakes, and finished with a scatter of sesame seeds. It’s crunchy, salty and spicy. It’s really tasty at room temperature, which makes it a great bento filler.

    White rice seasoned with Furikake

  4. There are limitless sushi rolls that are not cooked. I do all sorts of sushi, leaving out the sashimi, for parties where the trays will sit out for  while. To throw in some variety, you can make some into cones, and also make nigiri sushi, which are little sushi rice balls that you form in the palm of your hand, and place your piece of (cooked/smoked) sushi on top with a swipe of wasabi underneath. And then you can 'tie' it up with a thin ribbon of nori if you want.

    Also, gyoza with dipping sauce. Sunonomo salad. Tempura with dipping sauce. Various motoyaki, and barbequed meats Japanese style
