what do we call this branch where u study directing? stage/cinema/theater

Pretty much any one of those which you mentioned, most universities will simply call it theater in which there is stage directing.

However private film and visual arts schools will have a more specialized program for directing.  

Maybe someone more familiar with the Arts can give you a better answer than I.
