Question:

Columbia University?

I'm only going into eighth grade this year, but since my brother went through the whole college deal this year, it got me thinking. I really have my heart set on Columbia. My grandfather and grandmother both went there, and according to my aunt, that makes me a legacy. I play softball and field hockey, guitar, piano, and may be learning to play saxophone. I have plans to volunteer. Although I was only in seventh grade, I took (through Johns Hopkins) the SATs. They may not have been as high as I wanted, but then again, I'm in eighth grade. They were: Writing:640, Math: 540, and Reading: 550. This won me an award for being in a top percentage of kids taking the SATs in 7- 8 grade in my area.

I know that was a long question, but what might my chances be?

You sound like you are on the right path.  You need substantial AP and honors courses, and you should do 3-4 years of a language minimum in HS.  You should investigate interesting activities that will set you apart, such as debate, study abroad, science field experiences, and so forth.  I don't think your GP attendance exactly makes you a "legacy," but you can certainly put that on your application.  Be sure to also apply to Barnard, as it's right across the street (literally) and you can take CU classes.  You definitely need to up your reading score, so take literature courses in HS if you have them, or do a summer program.
