Complex Emergence / Spontaneous self assembly??

Question

Does anyone know a good bio molecule with which to illustrate how complex emergence works?

I've looked around on the net, however I can't find any article that explains assembly in layman's terms . I was hoping someone could explain it using any biomolecule or point me in the right direction please?

Do a little research on prions.  They are infective proteins discovered by Stanley Pruisner at UC San Francisco.  He won the Nobel Prize in Medicine for his work.
