Question:

Condensed milk into Caramel? Will this work?

If I make caramel this method, will the caramel be the correct consistency to roll divinity rolls in and then roll in pecans. I never made it so I don't know how well it sets up or if it will run off the logs?

  1. This is what I do

    CARMEL SWEETENED CONDENSED MILK

    1 can Sweetened condensed milk (not evaporated)

    Remove label from can. Place UNOPENED can in the bottom of a VERY DEEP pot. Cover with water so that the water is 3 to 4-inches above the can. Bring the water to a boil and boil steadily for four (4) hours.

    YOU MUST MAKE SURE THAT THE CAN IS ALWAYS COMPLETELY COVERED WITH WATER. NEVER LET THE WATER LEVEL GET DOWN TO THE TOP OF THE CAN, BECAUSE THIS COULD CAUSE THE CAN TO EXPLODE. Add water as the level in the pan drops.

    You may boil 3-4 cans at once. After the four (4) hours is up, remove the can(s) with tongs and place on a wire rack to cool. Refrigerate. When can is cold, open and you will have soft caramel; even the color is caramel. The only bad thing about boiling this one can is that you will be sorry you didn't boil two or three.

    This is very sweet, great served sliced on a pineapple ring and a dollop of cool whip and a cherry on to. The pineapple helps to cut the sweetness down somewhat.

    TO CARMELIZE SWEETENED CONDENSED MILK

    DULCE DE LECHE

    OVEN METHODd Pour 1 can sweetened condensed milk into 9 inch pie plate. Cover with foil; place in larger shallow pan. Fill larger pan with hot water. Bake at

    425 degrees for 1 1/2 hours or until thick and caramel colored. Beat until smooth.

    STOVETOP METHOD: Pour 1 can condensed milk into top of double boiler; place over boiling water. Over low heat, simmer 1 to 1 1/2 hours or until thick and caramel colored. Beat until smooth.

    MICROWAVE METHOD : Pour 1 can condensed milk into 2 quart glass measure. cook on 50 % power (medium) for 4 minutes, stirring briskly every 2 minutes until smooth. cook on 30% power (medium-low) 12-18 minutes ot until very thick and caramel

    colored, stirring briskly every 2 minutes until smooth.

    HOME MADE DULCE DE LECHE

    Make it in a pressure cooker with canned sweetened condensed milk. Remove can label. Place sealed can in pressure cooker and cover completely with water. Seal pressure cooker. Bring up to pressure and set timer for 30-minutes. After 30-minutes at full pressure turn off heat. Let pressure fall naturally. When pressure is gone open pressure cooker. Place pressure cooker in sink and flush interior with cold water. Fill pressure cooker with cold water and let stand for a half hour to allow canned sweetended condensed milk to completely cool. Open can and enjoy.


  2. This does indeed make an incredible topping called Dulce de leche, but it is NOT the same as caramel. The consistancy is that of a thick pudding, not true caramel that you can roll out or make into candies. True caramel isn't difficult to make and doesn't take as long. Dulce de leche isn't as sticky, it can't hold its shape. It is, however, fantastic.
