Confused about pizza sauce recipe?

Hi,

i have found recipe the pizza sauce recipe below and it sounds really great but i just wanted to check a couple things. It says to use 8 ounces of tomato sauce. I'm in australia and what we call tomato sauce is what you put on fries. do you think this is what is meant to be used or would it mean like a passata sauce, which is kind of like a base tomato sauce for pasta? Any help would be great.

2 tablespoons olive oil

1 tablespoon butter

1/2 cup onion, chopped

1/4 cup celery, chopped

1 garlic clove, minced

1 (8 ounce) can tomato sauce

1 (6 ounce) can tomato paste

2 tablespoons grated parmesan cheese

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon sugar

1/4 teaspoon black pepper

1 small bay leaf

1 teaspoon fennel seed

I'm in the US. Do you have canned tomato? I often stock the pantry with canned whole tomato so that I don't have to store several different kinds of canned tomato. Then I can just make sauce or diced with the food processor or blender. Or if you just buy two cans of the paste you could just add water to get the right consistency. That is the only difference in American tomato paste and sauce. The canned tomato paste we get usually is made from tomato concentrate ( paste )anyway.

wow sounds like thats gunna be one really long shopping trip.

i have been a chef in Melbourne for a while now and let me tell you that all the pizza sauces i have ever made go something like this

Napolitana sauce

oregano (dried)

salt pepper

crushed garlic

and good old eppalock consume (water)

use the water to get the cosistancy if your napolitana sce is too thick

its not glamorous but it works.

believe it or not this recipe is over the top for 95 % of all pizza shops.

they open a can and away they go.

I live in New Zealand, so I'm assuming we call tomato sauce the same thing as you do in Australia. Average tomato sauce (like ketchup) wouldn't taste good in a pizza sauce, go for something like passata!
