Is it possible to one day wake up blind with no prior eye sight problems?

Unfortunately that can happen . It can be due to tears in the retina at the back of the eyes. You may not get any warning . But if you attend  the opticians for regular eye checks it can be avoided

It definetly can happen. You can wake up one day and be deaf, paralyzed from the waste down also. Don't take anything you have for granted.

Yes, torsion of the neck during sleep can cause dissociation of the optic nerver from the retina. This condition can be exacerbated by right hand people sleeping on their left side and vice-a-versa.
