Convection oven - what do I need to know????

I just bought a new oven with gift cards from our wedding (yeah!!!!) but have never used a convection oven. I bake a LOT (which is why I bought the convection oven) and have heard you need to adjust times and temps for things when using the convection feature. I make a lot of cookies, cakes and roasts. Any tips would be greatly appreciated!

  1. Congratulations!  I love my conv. oven!

    It does cook faster, and more evenly.  If using a basic recipe that does not mention a conv. oven (most won't), then reduce your heat by 25ºF.  You may need to reduce cooking time by a couple minutes, too, but you'll have to figure that out by trial and error.  Just set timer for a couple minutes shy of the shortest time in the recipe and watch it.

    Oh, and know how you usually reduce a reg. oven temp by 25º for a glass pan?   Just don't reduce temp by 50ºF for being a conv. oven AND using glass.
