  1. For what?  All purpose flour has less gluten than bread flour and more gluten than cake flour.  You can substitute it for either, but the end result will be a little different.  Specifically, you'll get less chewy bread and less tender cake.  For cake, I don't think the difference is big enough to matter.  For bread, I use bread flour whenever possible.


  2. Yes, but it will change the texture of the cake.

    you can use up to 1/3 corn starch to replace 1/3 of the flour for cakes

    It would also improve the texture if you sift the flour prior to using it to bake a cake and add a pinch of baking powder.

    The substitution would be for each cup of cake flour called for use 1 cup less 2 tablespoons of all purpose flour or

    1 cup cake flour equals 7/8 cup all purpose flour.
