Question:

Converting surplus baked white bread and making ethanol from it.?

By adding an enzyme to turn the starches into sugars has anyone done this before? I plan on doing just that but could use a little help....

  1. Yes . Bread is starch , bio-degradable material , can be further fermented.

This doesn't sound like a very feasible way to make commercial quantities of alcohol as you would use a lot of fuel in the process of  collecting all the old stale bread, rolls etc. Also, how much old bread is actually discarded anyway? It might be better to find a way convert cellulose to sugar and ferment that; you could use all kinds of waste products which are available in huge amounts virtually everywhere: saw dust, yard waste, demolition lumber, stumps, sawmill slabs, bagasse, cornstalks, etc.
