  1. Its the French En Papillette, or something like that.

    It means "in a pouch"

    You can use anything for this. Foil works well, but sometimes is clumsy to handle. Parchment paper works well, but can be hard to seal well.

    It really depends on the dish you're making. I usually do parchment paper for anything in the oven, and just use a stapler to seal it.

    But if I'm using the grill, then I automatically reach for the foil.


  2. You can use foil when cooking items in an oven but items can stick to it...but there is a non stick foil available as an alternative which always works for me.
