Cooking Risotto and ingredients!?

Ok so here are the ingredients I have to make a risotto.

Chicken

Bacon

Red onion

Garlic

Pine nuts

Chicken stock

Aborio rice.

Every time I make risotto it tends to be a little gluggy. What am I doing wrong.

If someone could explain to me how to cook the perfect Risotto, that would be great!!

  1. With the ingredients you actually have, do this:

    In the microwave, heat the chicken broth til almost boiling, about 6 minutes. in a small fry pan over low heat, toast the pine nuts

    Fry the bacon, remove from the fat when crisp and set aside to drain. Remove all but 2 TBS bacon fat. Add 1/2 cup red onion and 1 tbs chopped garlic and cook for a couple minutes to soften. Add 2 cups rice to themixture and cook over medium heat for about 4 minutes, stirring constantly, to brown the rice and coat in the bacon fat.

    Slowly, our in the broth, a 1/2 cup at a time, and stir to incorporate after each addition, continue to slowly add broth and stir until creamy, but with a little bite.

    No Cheese???

    If you do have, at this point, I would add a /14 cup butter and 1/4 cup parmesan and stir until incorporated.

    Serve with the cooked chicken on top.


  2. you r over cooking your rice hun....the gluten in the rice is breaking up instead of leaving you a creamy consistency. try undercooking your rice by a few, 3-5 minutes under your normal cooking time.....good luck!

    CHICKEN Risotto::

    2 cups uncooked white rice

    1 (10.75 ounce) can condensed cream of mushroom soup

    2 cups chicken broth

    1 cup fresh mushrooms, sliced

    2 tablespoons chopped green bell pepper

    3 tablespoons chopped fresh basil

    1 tablespoon dried minced onion

    1 teaspoon dried oregano

    3 cloves garlic, minced

    1/4 teaspoon ground black pepper

    1/4 cup grated Parmesan cheese

    4 chicken thighs

    3 tablespoons Italian-style dry bread crumbs

    2 tablespoons grated Parmesan cheese

    Preheat oven to 325 degrees F (165 degrees C).

    In a large bowl, combine the rice, mushroom soup, chicken broth, mushrooms, green bell pepper, basil, onion, oregano, garlic, ground black pepper and 1/4 cup cheese. Stir until all ingredients are well mixed.

    Pour this mixture into a 9x13 inch baking dish. Place the chicken on top of the mixture and cover with foil. In a separate small bowl, combine the bread crumbs and remaining cheese and set aside.

    Bake at 325 degrees F (165 degrees C) for 1 hour, remove from oven, uncover and sprinkle with the reserved bread crumb mixture. Return to oven and bake, uncovered, for 20 more minutes, or until golden brown.
