Cooking chicken on the grill...?

I am a male college student so already I am at a deficit when it comes to cooking. I want to cook some chicken tonight. I have already made some kind of makeshift marinade. My only problem is I don't know when my chicken is done. It always ends up dry, is there any time limit? Around 20 mins at medium heat?

  1. cook it at a high heat to seal it than turn it down. just cut into the chicken and check its cooked. as soon as there is no pink its done. depending on how thick the chicken is it may take 5 mins on each side. remember to check it. =) enjoy

You can poach your chicken on the stove in a pot.  Cover your chicken with water and bring to a boil, once it boils reduce heat and allow to simmer about 20 mins.  Remove from flame and let is stand for about 5 to  10 mins.  Now you can remove it from the liquid and only grill it for as long as necessary to give it color and let your sauce adhere to it.  You know that your chicken is done and by poaching it, it will be moist.  Good Luck. Oh yeah, add some salt, pepper, onion and garlic to the water.  You can take the skin off or leave it on before you poach it.  Personally skinless allows your sauce to flavor the meat and not the skin. The skin will prevent flavorings to penetrate.  Some flavor may get through but not as much as skinless.

  3. The secret is to use indirect heat for chicken on a grill.

    If using charcoal, build the fire on one side of the grill only.

    If using gas or propane, light only one burner.

    Place chicken, skin side down, over heat until golden.

    Then flip onto non-heated side, & close lid for equal time.

    Test for clear juices or with meat thermometer for done.

    Another approach is to wrap pieces in foil with onion or lemon.

    Cook on both sides, depending on size, test for done.

  4. poke it with a fork/knife and when it runs clear, its done!  Time varies with the temp.
