He doesn't like chicken and all my good recipes have chicken! What's something really yummy that would be hard for me to s***w up????

  1. Grill Steak! Men love that! lol it wouldnt be hard to s***w up if you bought a really tender cut of meat!

    This may look complicated but its totally worth the extra time. I'm not a huge fan of blue cheese but i love this recipe! (if you dont like blue cheese at all you dont have to include the butter. Just buy herb butter instead!)

    INGREDIENTS

    2 tablespoons red wine vinegar

    2 cloves garlic, minced

    1 tablespoon cracked black pepper

    1 teaspoon dried rosemary leaves, crumbled

    1 teaspoon dried oregano

    1/4 teaspoon kosher salt

    1/4 cup olive oil

    1 1/2 pounds flat iron steak

    3 tablespoons softened unsalted butter

    1 ounce crumbled blue cheese

    1 tablespoon chopped fresh chives

    1/8 teaspoon cracked black pepper



    DIRECTIONS

    Whisk together vinegar, garlic, 1 tablespoon black pepper, rosemary, oregano, and kosher salt in a bowl along with the olive oil. Place the flat iron steak into a resealable plastic bag, and pour the marinade overtop. Squeeze the excess air from the bag and seal. Marinate in the refrigerator 30 minutes.

    Preheat an outdoor grill for medium-high heat and lightly oil grate. Remove steak from the marinade, shake off excess, and discard the remaining marinade. Allow the steak to stand at room temperature for 15 minutes as the grill warms.

    Mash together the butter, blue cheese, chives, and 1/8 teaspoon of black pepper; set aside. Cook the steak on the preheated grill to desired degree of doneness, about 5 minutes per side for medium-rare. Allow the steak to rest in a warm place for 10 minutes before slicing thinly across the grain. Serve with a dollop of blue cheese-chive butter.

    You should serve this with twice baked potatoes

    INGREDIENTS

    2 medium baking potatoes

    2 tablespoons butter or margarine, softened

    1 tablespoon milk

    1/4 teaspoon salt

    1 (3 ounce) package cream cheese, cubed

    2 tablespoons sour cream

    Paprika

    DIRECTIONS

    Pierce potatoes and bake at 375 degrees F for 1 hour or until tender. Cool. Cut a thin slice off the top of each potato. Scoop out the pulp and place in a mixing bowl. Add butter, milk and salt; beat until fluffy. Beat in cream cheese and sour cream. Spoon into potato shells. Sprinkle with paprika. Place on a baking sheet. Bake, uncovered, at 350 degrees F for 20-25 minutes or until heated through and tops are golden brown.

    Broccoli Beef

    Prepare:

    1/ 2lb. thinly sliced tender beef (about 1/8” thick)

    Wash broccoli stalks.  With a paring knife, strip away the tough outer layer starting from the cut end of the stalk.  Leave the outer fiber which is closer to the flower.  Slice the stalk diagonally into 1/4” pieces and the flowerettes into one bite or two bite-sized pieces.

    In a mixing bowl, place:

    1/2 tsp salt

    1/2 tsp soy sauce

    1/4 tsp sugar

    Mix ingredients and add:

    Sliced beef

    Marinade for 5 minutes.

    In a preheated wok or large skillet add:

    1 Tablespoon vegetable oil

    Turn to higher heat and add:

    Marinated sliced beef

    Toss-mix and brown rapidly about 1 minute, remove beef and place aside. (Beef should be rare in center.)

    In the same utensil, place:

    2 Tablespoons vegetable oil

    1/2 tsp salt

    Turn to higher heat and add:

    Broccoli

    1 tsp soy sauce

    1/2 tsp sugar

    Toss and mix for 1 minute, then add:

    1/2 cup chicken stock

    Cover and cook for 5 minutes. Remove cover.

    Add:

    Pre-browned beef

    1 Tablespoon cornstarch (First make paste with 1 Tablespoon tap water)

    Toss and mix continuously making sure liquid ingredients are well blended with cornstarch paste. When gravy thickens sufficiently to lightly coat the broccoli and beef (about 2 minutes), remove from fire and serve immediately. Serves 4

  7. Mama's Cheesy Meatloaf

    1 lb. ground chuck

    1 egg, beaten

    2 tbls. worcestershire sauce

    1 cup ketchup

    1/2 tsp. onion salt

    3/4 stack Town House Crackers, crushed

    2 cups grated cheese (I like sharp)

    Mix all ingredients, except cheese. Press meat out onto plastic wrap about 1/2 inch thick. Sprinkle cheese over meat evenly. Roll up the meatloaf, jelly roll style. Tuck in the ends, and secure with LOTS of toothpicks. Bake at 350 degrees for about 45 min.

    Sauce:

    ½cup ketchup

    ¼ cup mustard

    ¼ cup brown sugar

    Combine, and heat thoroughly. About 15 min. or 20 min. before meatloaf is done, pour on some of the sauce, and finish baking. Keep the rest to pour onto the meatloaf slices at the table.

    SOUR CREAM MASHED POTATOES

    3 pounds boiling potatoes, peeled

    Kosher salt

    1 1/2 cups milk

    6 tablespoons unsalted butter

    1/2 cup sour cream

    1/2 teaspoon freshly ground black pepper

    Cut the potatoes into 1-inch cubes and place them in a large pot. Cover the potatoes with cold water and add enough salt so the water tastes quite salty. Bring to a boil, then lower the heat and simmer, uncovered, for about 10 to 12 minutes, until the potatoes fall apart easily when pierced with a fork.

    Meanwhile, heat the milk and butter in a small saucepan, making sure it doesn't boil. Set aside until the potatoes are done.

    As soon as the potatoes are tender, drain them in a colander. Place a food mill fitted with a small disc/blade over a glass bowl. Process the potatoes through the food mill (or mash with a masher). As soon as the potatoes are mashed, slowly whisk in enough of the hot milk/butter mixture to make the potatoes very creamy. Add 2 teaspoons of salt and the sour cream and pepper and whisk to combine. Taste for seasoning and serve hot.

    Roasted Carrots with Ginger-Orange Glaze

    Serves 8

    Inspect your bag of baby carrots carefully for pockets of water. Carrots taken from the top of the supermarket’s carrot pile are often waterlogged. This not only makes carrots mealy, it also dashes any hopes of caramelization in the oven.

    2 pounds baby carrots (two 16-ounce bags)

    2 tablespoons olive oil

    1/2 teaspoon table salt

    1 tablespoon orange marmalade

    1 tablespoon water

    1/2 teaspoon grated fresh ginger

    1. Adjust oven rack to middle position and heat oven to 475 degrees. Toss carrots, oil, and salt in broiler-pan bottom. Spread into single layer and roast 10 minutes.

    2. After carrots have roasted 10 minutes, while carrots continue to roast, bring 1 heaping tablespoon orange marmalade, 1 tablespoon water, and 1/2 teaspoon grated fresh ginger to simmer in small saucepan over medium-high heat. Drizzle mixture over carrots; shake pan to coat, and continue roasting about 8 minutes longer, shaking pan twice more, until carrots are browned and tender.

    Chocolate Pudding Cake

    This makes a nice cake layer that magically floats atop a layer of warm, fudge pudding!

    3/4 cup granulated sugar

    1 cup plain flour

    1/4 teaspoon salt

    2 teaspoons of baking powder

    2 Tablespoons cocoa

    ½ cup milk

    1 teaspoon of vanilla

    3 Tablespoons melted, cooled, margarine

    Sift sugar, flour, salt, baking powder and cocoa together in pan. Stir in milk, margarine and vanilla. Batter will look like brownie batter. Spread batter into greased baking dish (Pyrex bowl or 9”x15” dish).

    TOPPING:

    ½ cup of granulated sugar

    ½ cup brown sugar

    1/4 cup cocoa

    Mix topping sugars and cocoa together and sprinkle dry ingredients over batter. Pour 1 ½ cups of tap water over all. DO NOT STIR.

    Place in oven and bake at 350ºF for 45 minutes or until topping is done. (In the baking process, ingredients will reverse themselves - finished product will look like a brownie on top and have chocolate pudding on bottom.)

    Serve in bowls with spoons. Serves 6-8 people. Good with vanilla ice cream or cool whip.


  8. How about a really fancy pizza?

    I use a good roast and season it with whatever sounds good, saute the outside and toss it in the crock pot with some red onions cut up and a good bbq sauce. Let cook all day. You can make a crust or buy one but I use bbq sauce as the sauce, sprinkle some bacon pieces on top and then whatever cheese. Put the shredded roast on next then some sauted red and green bell peppers and pineapple. Its SOOO good. I serve along with some good garlic bread and a blt pasta ranch salad and some red wine.

  9. Most men love meatloaf.  Good home-style cooking.  Serve it with either mashed potatoes or baked.  And do some steamed broccoli.  And some warm, fresh rolls.  Berries and whipped cream for a light dessert.

I use this one when I need something fast and great tasting (hopefully no shell fish allergies!)  Cook up a little linguini & set it aside.Then  Saute' minced garlic in some olive oil just for a min. then add  some nice large peeled+cleaned shrimp.  After they are cooked add a some fresh lemon juice,and a pat of butter,  throw the linguini in and toss.  I like to put some thin slices of the lemon on top after I put it in a serving dish.  Looks great and tastes even better!  

  11. spaghetti.  It is very easy to make.  You can get the pillsbury muffins in a can and make those.  Have a nice salad.  It takes time to cut the veggies so it will not seem like you just threw the dinner together.  Make sure you find out his favorite dressing or have several varieties on hand.  Remember the wine too.
