Cooking for boyfriends family...help?

So i'm going to visit my boyfriend and his family around November and i've been trying to think of some recipes to use. I've pretty much looked through everyone of my family's recipe books, looked some up online, and asked a couple of my friends.

I was thinking maybe..

Potato croquettes

Rice with a mixture of tomato sauce, chicken, onions, etc...

I wanna be able to make something that goes well with croquettes...any suggestions?

  1. Well, when I cooked for my boyfriends family. I made chili beans, cornbread, and fried chicken. It went over very well with them.

  3. I would make something you've made before (practice now to perfect it!) and not get too "out there."  Hnoestly, I have no idea what potato croquettes are, other than potatoes mounded into a little mound and fried..... sounds like  side dish to me.

  4. I think your menu sounds yummy... whatever you make, I recommend that you keep it simple. You don't want to look like you're showing off, you know? Ask your boyfriend what their favorites restaurants/foods are for ideas. I'd lean towards comfort foods, because of the season (beef stew, with a green salad and crusty bread; roasted chicken or beef w/ veggies) or maybe something that reflects your family heritage (like Italian food, or Mexican for me). Also, make something yummy and sweet... And once you decide on your menu, practice a few times, so that it's easy when you make it for a bunch of people.  

  5. You could change the potato croquettes into salmon croquettes, and serve with some steamed silver beet and boiled carrots.

    If you stick to plain croquettes you will need some meat, fish or chicken.

    Battered fish fillets would be my choice.

  6. If you're set on maki;ng potato croquettes, you certainly don't need a rice dish too!  (or pasta)

    Green salad with balsamic vignarette dressing.  Carmelize sliced almonds (stir with sugar until sugar has melted & coated the nuts); 1 can drained mandarin oranges, and sliced red onion... toss together

    STICKY CHICKEN

    2-1/2 to 3 lb. chicken pieces

    flour & oil

    1 pkg. onion soup mix

    1 (1 lb) can stewed tomatoes

    1 c. dry white wine

    salt & pepper

    8 oz. shredded mozzarella cheese

    Coat chicken pieces with flour and brown in oil.  Place in shallow baking pan.  Blend soup mix, tomatoes, wine, salt & pepper, and pour over chicken.  Bake at 325 for 1 hour. Sprinkle cheese over chicken and bake 15 min. longer .... serves 4-6

    Maybe serve a citrus fruit salad with this too, to cut the heaviness of the cheese and your potatoes...

    SUPER FUDGE PIE

    1/2 2. butter

    2 sq. unsweetened chocolate

    2 eggs

    1 c. sugar

    1/4 c. all purpose flour

    pinch of salt

    ice cream or whipped cream for topping

    Melt butter & chocolate together.  Beat eggs in a bowl and gradually add sugar.  Add flour and salt; then combine with chocolate mixture.  Pour into ungreased 8" pie pan and bake at 350 for 20-25 min.  Cool and freeze.  This doesn't need to be thawed first to eat it... serve topped with ice cream or whipped cream - DO AHEAD
