Cooking for my gf for our 1 year dating anniversary and I have never cooked, any easy or simple recipes?

Any simple and easy recipes for beginners? She likes noodles so I was thinking some spaghetti and other things. Any websites or advice?

  1. CHEESY CHICKEN-N-NOODLE CASEROLE  

    2 packages egg noodles

    1 can cream of chicken or mushroom soup

    1 jar Cheese Whiz

    3 cans chicken, or 3 boneless chicken breast,

    3 tbsp of mayo

    1 box of cheese-its, or like crackers

    Broil and cut chicken into cubes.

    Prepare noodles according to package instructions. While noodles are cooking, heat soup, with 1 half can of milk on low heat.

    Gradually add Cheese Whiz, stirring constantly until all of the cheese is melted. Add the chicken, simmer for a few minutes, continuing to stir. Remove from heat.

    When noodles are finished, drain, and stir in the 3 tablespoons of mayonnaise. Add soup and cheese mixture until all noodles are coated well.

    Spray a casserole dish with non-stick cooking spray, and spoon the noodle mixture into it. Crush several handfuls of Cheese-Its, and sprinkle them over the noodles, or however much you like.

    Bake in 350° oven for 25 minutes, or until sauce is bubbly and hot.

    This is good as a meal alone, and tastes even better the next day. You can substitute the chicken with tuna fish. You can also use Cream of Celery Soup, which gives it a differet taste. Or try mixing the soups, half chicken, half mushroom. Adjust to your own taste




  2. I don't know if your girlfriend likes seafood or not but here are two if she does.  If she doesn't then for the Alfredo recipe you can substitute some leftover or store-bought rotisserie chicken - torn into bite-sized pieces.

    SALMON

    2 (8 oz) fillets of salmon

    mayonnaise

    dill

    onion powder

    fresh ground black pepper

    Line a rectangular cake pan with aluminum foil.  Place the two fillets in the pan, side-by-side.  Spread a thick layer of mayonnaise over the fish (these keeps them moist).  Sprinkle with dill (so it lookes like you've sprinkled it with a little black pepper) and sprinkle with some onion powder.  Then sprinkle it with the fresh ground black pepper.  Place another piece of aluminum foil over the fish and seal the foil together.  Bake in a preheated 400º oven 30-35 minutes.

    If you take a baking potato (like a russet) and cut it into steak fries, you can bake them and they will be done at the same time.  For the steak fries, place in a small bowl, a mixture of fresh ground black pepper, some onion powder (not quite 1/8 tsp), some paprika (about 1/8 tsp), some garlic powder (less than the onion powder) and 1/8 tsp sugar.  Mix all together.  Place the steak fries in a bowl and spray with PAM.  Stir to coat and spray one more time.  Sprinkle half the mixture over them and stir to coat.  Sprinkle the other half and give it another stir.  Place the steak fries in a single layer on a cookie sheet and put in the oven at the same time you put in the salmon.  At the 15 minute mark, turn the fries over to crisp the other side.  If you have a wire mesh, you can place that over a cookie sheet and then you don't have to turn them - the air will cook the bottom and top at the same time.

    TARTAR SAUCE

    Take 2 custard cups and add:

    Dill - about 1/8 tsp

    fresh ground black pepper

    a little less than 1/8 tsp onion powder

    1 teaspoonful of pickle relish - sweet or dill pickle relish

    Mayonnaise

    Mix all the ingredients together and serve with the fish.  Dipping the fries in it is wonderful!

    SHRIMP ALFREDO

    Very simple.  Here's all you need;

    1/2 cube butter

    1/2 small container of cream

    cooked mostacholli noodles (those on the slant)

    1/4 c shredded Parmesan cheese

    8 oz cooked shrimp - not the little cocktail ones - the bigger ones

    Place 1/2 cube of butter in a skillet.  When it has melted, add half of a small container of cream.  Stir it together and heat until it is almost to the boil but don't let it boil.  Add the Parmesan and stir.  Add the noodles and shrimp and gently stir.  It will thicken.  Serve with some nice garlic bread and a tossed salad.  Again, if she doesn't like fish, substitute bite-sized chunks of cooked chicken.

    To make the garlic bread - take a loaf of french bread, Slice from the top down but not through the bottom from one end to the other.  Butter one side of each slice and sprinkle it with garlic powder.  Put the whole thing in aluminum foil and bake in a preheated 350º oven for 20 to 25 minutes.

    To cook the noodles.  Bring water to the boil.  Add the noodles and give it a stir.  Turn the heat down a little so it doesn't boil like mad and cook for exactly 10 minutes, stirring occasionally to keep it from sticking to the bottom of the pot.  Drain and put into the Alfredo sauce.  The Alfredo sauce takes less than 15 minutes to make once your noodles are cooked.

  3. Cook boneless skinless chicken b*****s in a skillet with a little oil about 4 minutes per side on medium heat. Add one chopped onion, cook briefly and add 1 cup of chicken broth. Cook about 3 minutes then add one jar of spaghetti sauce. Turn heat to low, cover and let simmer until chicken is done, approximately 20 minutes. Meanwhile, cook some spaghetti following directions on the box. Drain the pasta and serve the chicken and sauce over the pasta.  Bagged salad and some Italian bread complete the meal.

    Feeling more adventurous? Dip the chicken in beaten egg and roll in breadcrumbs & parmesan cheese and it's Chicken Parmigiana.
